RedCabbageColorpowerisdeepred,liquidisbrownpurple.Itcanbedissolvedinwater&alcohol,aceticacid,propyleneglycolsolutioneasily,butnotinoil.ThecolorofwatersolutionchangeswhenPHisdifferent.WhenPHisbelow3,thecolorispurplered,thecolorispinkredwhenPHisbetween4~6,andthecolourityisidealstability.Thesolutioncolorbecomesblue&green,andisunstablewhenPHisabove6.Thecolorofsolutioncan’tfadeunderlightforalongtime,andalsohasgoodresistancetohightemperatureinanacidicmedium.
DescriptionforAnthocyanin:
(Anthocyanins,alsoanthocyans)arewater-solublevacuolarpigmentsthatmayappearred,purple,orbluedependingonthepH.ANTHOCYANINbelongtoaparentclassofmoleculescalledflavonoidssynthesizedviathephenylpropanoidpathway;pioneerherbANTHOCYANINareodorlessandnearlyflavorless,contributingtotasteasamoderatelyastringentsensation.Anthocyaninoccurinalltissuesofhigherplants,includingleaves,stems,roots,flowers,andfruits.
Anthoxanthinareclear,whitetoyellowcounterpartsofanthocyaninoccurringinplants.Anthocyaninarederivativesofanthocyanidins,whichincludependantsugars.ANTHOCYANINFunctionInflowers,bright-redsand-purplesareadaptiveforattractingpollinators.Infruits,thecolorfulskinsalsoattracttheattentionofanimals,whichmayeatthefruitsanddispersetheseeds.Inphotosynthetictissues(suchasleavesandsometimesstems),anthocyaninshavebeenshowntoactasa"sunscreen",protectingcellsfromhigh-lightdamagebyabsorbingblue-greenandultravioletlight,therebyprotectingthetissuesfromphotoinhibition,orhigh-lightstress.
Thishasbeenshowntooccurinredjuvenileleaves,autumnleaves,andbroad-leafevergreenleavesthatturnredduringthewinter.Theredcolorationofleaveshasbeenproposedtopossiblycamouflageleavesfromherbivoresblindtoredwavelengths,orsignalunpalatability,sinceanthocyaninsynthesisoftencoincideswithsynthesisofunpalatablephenoliccompounds.Inadditiontotheirroleaslight-attenuators,anthocyaninsalsoactaspowerfulantioxidants.However,itisnotclearwhetheranthocyaninscansignificantlycontributetoscavengingoffreeradicalsproducedthroughmetabolicprocessesinleaves,sincetheyarelocatedinthevacuoleand,thus,spatiallyseparatedfrommetabolicreactiveoxygenspecies.
Somestudieshaveshownhydrogenperoxideproducedinotherorganellescanbeneutralizedbyvacuolaranthocyanin.ANTHOCYANINLightabsorbanceTheabsorbancepatternresponsiblefortheredcolorofanthocyaninsmaybecomplementarytothatofgreenchlorophyllinphotosyntheticallyactivetissuessuchasyoungQuercuscocciferaleaves.Itmayprotecttheleavesfromattacksbyplanteatersthatmaybeattractedbygreencolor.ANTHOCYANINpHindicatorAnthocyaninscanbeusedaspHindicatorsbecausetheircolorchangeswithpH;theyarepinkinacidicsolutions(pH<7),purpleinneutralsolutions(pH~7),greenish-yellowinalkalinesolutions(pH>7),andcolourlessinveryalkalinesolutions,wherethepigmentiscompletelyreduced.
