As a GRAS (Generally Recognized as Safe) substance, Nisin is non-toxic, non-residue, and metabolized into amino acids in the human body. It synergizes with low-temperature storage, vacuum/modified atmosphere packaging (MAP), acidic pH adjustment, salt, phosphates, and plant extracts (e.g., tea polyphenols, spice essential oils). For example, combining Nisin with EDTA or acidic conditions (pH <5.5) enhances inhibition of Gram-negative (G⁻) bacteria (e.g., Escherichia coli, Salmonella) by disrupting their outer membrane; pairing with vacuum packaging reduces aerobic bacterial growth, further improving preservation stability.
