Thermal properties of Sucralose
Melting point / Decomposition point: Approximately 125°C (decomposition temperature), some testing methods give an interval value of 114.5 - 126°C. Heating above this temperature begins decomposition, releasing CO, CO₂, etc., and it does not melt into a clear liquid;
Boiling point: No definite boiling point at normal pressure (decomposition has occurred before reaching the boiling point); Estimated boiling point 669.4°C / 760mmHg (theoretical value);
Vapor pressure: At 25°C, the vapor pressure is extremely low (≈0 Pa), almost non-volatile;
Flash point: High flash point, approximately 358.7°C, belonging to an inflammable powder.
Solubility of Sucralose
Water: Excellent water solubility, at 20°C the solubility is approximately 283g/L (28.3g/100 mL), at 25°C approximately 300g/L, significantly increasing to 660g/L at 60°C; The aqueous solution is clear and transparent;
Organic solvents: Easily soluble in methanol, ethanol, isopropanol, propylene glycol; slightly soluble in ether, ethyl acetate; difficult to dissolve in non-polar solvents (such as n-hexane, petroleum ether); in the water-lipid system, it is almost completely distributed in the water phase;
Polar non-protic solvents: Soluble in DMF, DMSO (about 30mg/mL).
