双乙酰酒石酸单双甘油酯
性状：
黄色粉末或颗粒状固体，易溶于热水。它是一种非离子乳化剂，HLB值为8-10。
用途：
能产生乳化、分散、耐老化等强效，可作为良好的乳化剂和分散剂使用。
（1）能有效提高面团的弹性、韧性和持气能力，降低面团软化程度，增加面包和蒸面包的体积，改善其组织和结构。
（2）能与直链淀粉发生反应，延缓和防止食品老化。
（3）可用于奶油中，使其更光滑更细腻。
（4）可用于黄油和浓缩黄油中，防止油分离，增强其稳定性。
（5）也可在糖、糖浆、香料中起诉。
（6）可用于非乳制奶精中，使乳液口感均匀、稳定、柔软。
用法：
（1）将本品置于60°C左右的温水中，得糊状物质，再按适当比例使用。
（2）将本品均匀溶解在油脂中，再进一步加工。
（3）直接与面粉混合使用。
推荐添加量：
生干面粉产品和生湿产品的最大添加量为 1.0%，非乳制奶精的最大添加量为 5.0%。添加量可根据奶油和发酵乳的生产需要而改变。

密封贮存于低温、干燥、阴凉、通风良好的地方，以防止受潮结块。严禁与易爆、易燃或有害物品一起储存和运输。保质期为12个月。
