Polysorbate 80 also knownas as polyoxyethylene sorbitan monooleate, consists of sorbitol, ethylene oxide, and oleic acid. It has a molecular formula of C64H124O26. At room temperature, it is in the form of pale-yellow to amber oily liquid. It is an O/W emulsifier with apolysorbate 80 food additiveHLB value of 15.0. It is soluble in water, ethanol, ethyl acetate, and toluene. Polysorbateglycol sorbitan monooleate is a surfactant with numerous applications in food, pharmaceutical, and cosmetics; other than that, it can also use as an emulsifier for culture medium to reduce the surface tension of the medium, which enhances the growth of cells.
