Natamycin 7681-93-8

Product Name: Natamycin
CAS No. 7681-93-8
Molecular formula: C₃₃H₄₇NO₁₃.
Molecular weight: 665.75
EINECS number 231-683-5
Physical and chemical properties
Appearance: It is a white or milky white crystalline powder containing three molecules of water of crystallization, almost odorless and tasteless.
Solubility: It is an amphoteric substance. Its solubility in water or lower alcohols increases with the decrease or increase of pH. The solubility is the lowest when neutral, and it increases when pH is below 3 or above 9. The solubility varies in different solvents. For instance, it is 0.005%-0.01% in water, 3.3% in methanol and 5.0% in dimethyl sulfoxide.
Stability: The dry powder is relatively stable when kept away from light and moisture. Only a small portion of it becomes inactive after being stored at room temperature for several years. Neutral aqueous solution is almost as stable as dry powder. It is very stable between pH4.5 and 9, but rapidly deactivates at extreme pH values. It decomposes under ultraviolet light and loses the tetraene structure.
