Phosphatidylserine, also known as diacylglycerol acylphosphoserine, serine phospholipid, and complex nerve acid, is a widely distributed phospholipid. Phosphatidylserine is a white waxy solid or light yellow loose powder, insoluble in methanol, ethanol, and anhydrous acetone, soluble in ether, petroleum ether, chloroform, emulsified in water. Its molecular formula is C42H82NO10P, relative molecular mass is 792, melting point is 135 ℃, boiling point is 165 ℃, and flash point is 335 ℃.
Phosphatidylserine is easily oxidized when exposed to air, and its color will gradually darken from white to yellow and then to black. Generally, phosphatidylserine is hardly affected by alcohol. Saturated phosphatidylserine and alcohol can form interlaced gel.
If phosphatidylserine is dissolved in water, only a very small part of it will form a true solution, while most of the insoluble lipids will form small clusters.
