DL-methionine powder

The α-amino group in DL-methionine has the typical reactivity of a primary amine and can participate in acylation, alkylation, and condensation reactions.
Acylation reaction: It reacts with acylating agents (e.g., acetic anhydride, benzoyl chloride) to form N-acyl DL-methionine derivatives. For example, reacting with acetic anhydride produces N-acetyl DL-methionine, a compound with enhanced lipophilicity and stability, which is commonly used as a food preservative and pharmaceutical intermediate.
Condensation reaction with aldehydes/ketones: The amino group undergoes dehydration condensation with aldehydes or ketones to form Schiff bases. When reacted with formaldehyde, it generates N-hydroxymethyl DL-methionine, which can be used as a crosslinking agent in polymer synthesis due to its reactive hydroxymethyl group.
Ninhydrin color reaction: Similar to other amino acids, DL-methionine reacts with ninhydrin under heating conditions to produce a purple-colored complex. The absorbance of this complex at 570 nm can be used for quantitative determination of DL-methionine content, with high sensitivity and good selectivity for amino acids.
