Solution Stability:
If nisin is dissolved in a solution for storage, the pH of the solution must be carefully controlled:
Acidic Solutions (pH 3–5): Nisin solutions can remain active for longer (e.g., 24–48 hours under refrigeration).
Neutral to Alkaline Solutions (pH ≥ 7): Activity declines rapidly, making such solutions unsuitable for prolonged storage.
