1. Freshness

Certain fishes are frozen before being processed. Though it is almost impossible to tell which varieties of the sardines have been frozen before they processed. Because Moroccan sardines distributors never label that whether the fishes have been frozen or not before processing. If you want fresher canned products then you need to choose the products prepared using this process.

If you want to know whether the fish has been frozen before processing or not then there is a method. If the fish inside the can is not intact then chances are that the fish has been frozen before processing.

2. Unsmoked and smoked

The name of the process defines the process difference itself. In the smoke process, either liquid smoke or smoke is kept in the tin with the oil before canning. The smoking process does not only change the taste of sardines but as well as it changes the texture of the sardines.

3. The type of oil

If you want sardines with oil then it is recommended you to choose the one with the lighter oil because lighter the oil, the better will be the sardines flesh. There are also the canned sardines soaked into the water but the texture of these is not as great as that of the oil ones.

4. Processing

Some sardines are fried while some are smoked before canning. Different flavors are added into these canned sardines. Some sardines are boneless while some are prepared with complete bone-in. Consider your choice and then buy the right product for you.
