Polysorbate81, also known as polyoxyethylene (5) sorbitan monooleate, consists of sorbitol, ethylene oxide, and oleic acid. It has a molecular formula of C34H64O11 . At room temperature, it is in the form of a pale-yellow orange oily liquid. It is an O/W emulsifier with an HLB value of 10.0. It is soluble in ethanol, ethyl acetate, and toluene; slightly soluble in mineral and vegetable oil. And it can be dispersed in water.
