The α-amino group in the molecule has typical primary amine reactivity and can undergo acylation, alkylation, and condensation reactions.Acylation reaction: It reacts with acylating agents such as acetic anhydride and benzoyl chloride to form N-acyl derivatives, which can improve the lipophilicity of the compound and expand its application in lipid-based formulations.Condensation reaction: It undergoes dehydration condensation with aldehydes or ketones to form Schiff bases. For example, reacting with formaldehyde produces N-hydroxymethyl-L-cysteine S-sulfate sodium salt, which has enhanced water solubility and can be used as a crosslinking agent in polymer synthesis.Color reaction: Similar to other amino acids, it reacts with ninhydrin under heating conditions to produce a purple-colored complex. The absorbance of the complex at 570 nm can be used for quantitative determination of the compound, with high sensitivity and good selectivity.
