Black sesame Matcha Mousse Cake
1. Make Matcha sponge cake slice (2 teaspoons Matcha powder, 20g hot water, 50g low powder, 2 eggs (separate), 40g fine sugar, a small amount of vanilla essence, 20g butter). Mix Matcha and hot water evenly
2.10g sugar + Vanilla + egg yolk, stir until thick and fluffy. Then mix with the Matcha solution of step 1 and stir evenly
3. Mix the protein and 30g fine sugar (add sugar in 3 times), beat until it is dry and wet
4. Then mix step 2 and step 3, and mix evenly with scraper
5. Sift in low gluten flour and mix evenly with scraper
6. Pour in the melted butter and mix well
7. Pour the batter on a lint free cloth and smooth enough to cover two pieces of cake. 170C, bake for about 15 minutes. To the surface, it feels elastic, no rustle, the surface is slightly colored, and it is put on the grid frame to cool after being out of the furnace
8. Make Matcha mousse (100g milk, 5g Matcha powder, 40g sugar, 2 pieces of gilding, 220g milk oil), mix Matcha powder and sugar evenly
9. Boil the milk, pour it into Matcha and mix well
10. Then add the gelatine soaked in cold water, mix well, and let cool

12. Pour the Matcha milk solution into the whipped milk oil in several times, mix well (in the state of viscosity, but it is better to scoop it up and spread it out naturally)
13. Two kinds of kitchen paper are padded on the mousse ring and placed on the board. No longer move before demoulding - first cut a piece of cake with the size of a mold and put it at the bottom of the mousse circle (the cake should be cooled before cutting).
14. Pour in some Matcha mousse. Frozen or refrigerated to set
15. Make Black Sesame Mousse (30g of pure black sesame powder, 90g of hot water, 1 piece of gilding, 30g of fine sugar, 120g of fresh milk oil), black sesame powder, add boiling water and stir evenly, add the soft gilding piece while hot and mix well
16. Cool the black sesame paste and mix it with whipped cream

18. Pour Black Sesame Mousse onto the solidified Matcha mousse, appropriate amount (try to keep the height of each layer consistent)
19. Put a layer of cake slices on the Black Sesame Mousse, and then pour in the Matcha mousse until it is full. Decoration after cold storage for 1 night
