Phosphatidyl serine
Phosphatidyl serine is formed by the hydrophilic glycerol skeleton as the head, and the two oleophilic groups with longer hydrocarbon chains as the tail. Among them, the glycerol skeleton of the head is formed by the combination of serine residue and phosphate residue with the light group of C-3 glycerol and the other two light groups of glycerol, respectively, and the fatty acid tail. Fatty acids at glycerol C-2 have longer carbon chains and more unsaturated bonds than those at glycerol C-1.
When the PH value of phosphatidyl serine is 7, it has one positive charge and two negative charges. If phosphatidylserine is hydrolyzed by a weak base to form a metal salt of fatty acids, the remaining portion cannot be hydrolyzed, and if phosphatidyl serine is hydrolyzed by a strong base to form glycerol phosphate, serine, and fatty acids.
