Natamycin is widely used as a natural preservative to prevent the growth of fungi (molds and yeasts) in foods.
1. Dairy Products:
·Cheese:
·Applied to the surface of cheeses (as a spray or dip) to prevent mold growth during aging and storage.
·It does not affect the beneficial bacterial cultures used in cheese fermentation.
·Yogurt and Other Fermented Dairy Products:
·Prevents spoilage caused by fungi without inhibiting the bacterial cultures responsible for fermentation.
2. Baked Goods:
Extends the shelf life of bread, cakes, and pastries by preventing mold and yeast growth.
3. Meat Products:
Used on cured or processed meats like sausages and dried meats to prevent surface fungal contamination.
4. Beverages:
Used in certain beverages prone to fungal contamination, such as fruit juices or wine, to extend shelf life.
5. Other Packaged Foods:
Incorporated into food packaging materials to inhibit fungal growth directly in the package environment.
