It is readily soluble in water (about 162 g/L, 25°C), slightly soluble in ethanol, and insoluble in ether and chloroform.
The aqueous solution is neutral to weakly acidic.

The cyclic structure enables it to form a unique conformation in proteins, often occurring in the β -turn and helical structures of collagen, affecting the spatial structure of proteins.
It can participate in sugar metabolism and energy generation, be converted into glutamic acid in the liver, and then participate in the tricarboxylic acid cycle.
