Nisin is a natural antimicrobial peptide produced by certain strains of the bacterium Lactococcus lactis.It has been widely used as a food preservative, including in the preservation of meat products.

Nisinexhibits antimicrobial activity against a variety of Gram-positive bacteria, including some food spoilage and pathogenic bacteria such as Listeria monocytogenes.It works by disrupting the cell membrane of susceptible bacteria.

The use of nisin in meat products can help extend their shelf life by inhibiting the growth of spoilage and pathogenic microorganisms.This can contribute to maintaining the quality and safety of meat products over a more extended period.
