Red Fermented rice is obtained form monascus by using solid fermentation the rice as raw material. It has striking color, light and heat stability, wide PH plying scope, purity and safety. It can be used as a natural colorant and health-caring food that can produce a rapid reduction of plasma chdesterol and plasma glyceride levels in man. It also conforms to national standard, numbered GB4926-2008.
