This is the most common and well-established use of monosodium fumarate, leveraging its role as an acidulant, flavor modifier, and preservative: Acidulant and Flavor Enhancer: It imparts a tart, acidic taste to foods and beverages, similar to other acidulants like citric acid but with a slightly more intense and lingering tartness. It is used in: Soft drinks, fruit juices, and powdered drink mixes to balance sweetness and enhance fruit-like flavors. Confections (e.g., candies, gummies) and fruit-flavored snacks to add a tangy note. Baked goods (e.g., cakes, pastries) to adjust flavor profiles and complement sweet ingredients. Preservative and Shelf-Life Extender: By lowering the pH of food products, it creates an acidic environment that inhibits the growth of bacteria, mold, and yeast. This helps extend the shelf life of processed foods like jams, jellies, sauces, and canned fruits. Leavening Aid: In some baked goods, it reacts with baking soda (sodium bicarbonate) to release carbon dioxide gas, contributing to the rise and texture of the final product (e.g., in cookies, muffins, or quick breads).
