Emulsifiers
Emulsion is a mixture of two immiscible liquids, where the dispersed phase is dispersed in the continuous phase. This dispersion can be achieved by applying physical forces, for example by a whisk or homogenizer, however, over time this mixture will spontaneously seperate and break apart. With the addition of emulsifier, the dispersion phase can be stabily and evenly distribute in droplets in the continuous phase.
