Nisin's stability during storage
Nisin’s stability during storage directly determines its shelf life and efficacy in end products.
Dry powder form: When stored in sealed, light-resistant containers at <25℃ and relative humidity <60%, nisin retains >90% activity for 2–3 years. Poor storage conditions (moisture, light, high temperature) cause moisture absorption and oxidative degradation, leading to reduced efficacy when added to foods.
Aqueous solutions: Nisin solutions (10–100 mg/mL) are less stable, retaining activity for 1–2 weeks at 4℃ (with preservatives like 0.01% sodium azide) but only 2–3 days at room temperature. Degraded aqueous nisin fails to inhibit bacteria effectively, highlighting the need for fresh preparation or microencapsulation to extend stability.
