As a GRAS (Generally Recognized as Safe) substance, Nisin is non-toxic, non-residue, and metabolized into amino acids in the human body. Its use allows for reduced reliance on synthetic chemical preservatives (e.g., sodium nitrite, potassium sorbate), aligning with consumer demand for natural, healthy food and complying with green breeding and food safety standards. It synergizes with low-temperature storage, vacuum/modified atmosphere packaging (MAP), acidic pH adjustment, salt, phosphates, and plant extracts (e.g., tea polyphenols, spice essential oils). For example, combining Nisin with EDTA or acidic conditions (pH <5.5) enhances inhibition of Gram-negative (G⁻) bacteria (e.g., Escherichia coli, Salmonella) by disrupting their outer membrane; pairing with vacuum packaging reduces aerobic bacterial growth, further improving preservation stability.
