Definition & Composition
1. Flavor characteristics
Sweet and spicy: mainly from Trans-Anethole, with a sweetness similar to licorice. Cool feeling: A refreshing smell from a small amount of cineulin. Warm woody note: slightly complex aroma of Anisaldehyde and Limonene.
2. Ingredient source
Natural extraction: Extraction of essential oil from fennel seeds or star anise by steam distillation or supercritical CO2.
3. Physical form
Liquid (mainly oil-soluble, partially water-soluble emulsification type). Powder (spray dried or β-cyclodextrin embedded for solid drinks).
4. Stability
High temperature resistance is good (fennel brain boiling point 234°C), but it is easy to oxidize under long-term light. It should be kept sealed away from light to prevent deterioration of the aroma.
