Steamed crucian with black bean sauce

Practice:
1. Scrape the scales and cut the belly of crucian carp, especially the black film in the belly
2. Then cut four knives on both sides of the back of the fish, put salt on both sides and the belly, and put ginger, scallion and white wine on the back for use.
3. Cut scallion and dried pepper into thin shreds and soak them in water.
4. Put the green onion and ginger on the crucian carp aside, and then put the sesame oil and spiced black bean into the belly of the fish.
5. Take a container and put half of the green onion and ginger just left under the crucian carp and the other half on the crucian carp.
6. Put the loaded crucian into the steamer of Saiqi, cover and steam for 10 minutes.
7. After 10 minutes, take out the steamed crucian carp, pour out the soup, clip out the scallion and ginger, pour in three spoons of soy sauce and one spoonful of sesame oil, and put on the scallion and pepper.
8. Heat the oil in the wok, then pour the hot oil directly into the shredded onion and pepper.
