Antimicrobial Characteristics
·Inhibition Range: Nisin is effective against many Gram-positive bacteria that cause food spoilage, such as Clostridium botulinum, Staphylococcus aureus, Streptococcus pyogenes, Listeria monocytogenes, and Bacillus cereus. It is particularly effective against spore-forming Gram-positive bacteria. Under specific conditions, such as acidic environments, it can also kill certain Gram-negative bacteria.
·Mode of Action: Nisin's antimicrobial effect is achieved by disrupting the normal function of the bacterial cell membrane, causing membrane permeability, nutrient leakage, and membrane potential reduction, ultimately leading to the death of pathogenic and spoilage bacteria.
