How Do Surfactants Work?
The molecular structure of a surfactant has a polar head and a non-polar tail. The head is polar and can bond with water molecules to form a membrane. The tail has a non-polar, can be combined with the grease, forming a membrane. In this way, the surfactant can separate the water molecules from the oil, making the surface of the liquid more active, thus playing a role in cleaning, emulsifying, dispersing, humidifying.
