Nisin Raw Material Powder 500g
Nisin’s antimicrobial activity is highly specific and effective against Gram-positive bacteria, with a mechanism that avoids the development of widespread resistance (unlike many chemical preservatives):
- Targeting bacterial cell walls: Nisin binds tolipid II—a key precursor in the synthesis of peptidoglycan (the structural component of bacterial cell walls). This binding blocks peptidoglycan formation, weakening the cell wall.
- Pore formation: After binding to lipid II, nisin oligomerizes (forms small clusters) and inserts into the bacterial cell membrane, creating pores. These pores disrupt the membrane’s ion balance, leading to the leakage of essential molecules (e.g., K⁺, amino acids) and the influx of water—ultimately causing bacterial cell death.
- Sporicidal activity: Unlike many antibiotics, nisin inhibits the germination of bacterial spores (e.g.,Bacillus,Clostridium), which are resistant to heat and chemical treatments. This makes it critical for controlling spore-forming pathogens in canned or shelf-stable foods.
Notably, nisin is inactive against Gram-negative bacteria (e.g.,E. coli,Salmonella) due to their outer lipopolysaccharide (LPS) membrane, which blocks nisin entry. To address this, it is sometimes combined with chelating agents (e.g., EDTA) that disrupt the LPS membrane, extending its spectrum to include some Gram-negative pathogens.
