Natamycin is a natural antifungal agent and antibiotic that belongs to the polyene macrolide group. It is produced through fermentation by certain species of *Streptomyces*, such as *Streptomyces natalensis*. Natamycin has both medical and food applications due to its ability to inhibit the growth of fungi, including yeasts and molds.

1. Food Preservation:
·Natamycin is widely used in the food industry as a natural preservative, particularly for dairy products like cheese and yogurt.
·It prevents spoilage caused by fungi without affecting bacterial cultures, making it ideal for fermented foods.

2. Medical Applications:
·Natamycin is used to treat fungal infections, particularly those of the skin, eyes, and mucous membranes.
·It is commonly prescribed as an eye drop for fungal keratitis, a fungal infection of the cornea.
·Unlike some antifungals, natamycin is effective at low concentrations and has minimal systemic absorption when applied topically.
3. Mechanism of Action:
·Natamycin binds to ergosterol, a key component of fungal cell membranes, disrupting membrane integrity and inhibiting fungal growth.
·It does not act on bacteria, making it selective for fungal pathogens.
4. Safety:
·Natamycin is considered safe for human consumption and is approved by regulatory agencies like the FDA and EFSA (European Food Safety Authority).
