Phospholipids, particularly in the form of lecithin (a natural mixture of phospholipids like phosphatidylcholine, phosphatidylethanolamine, and phosphatidylinositol), are widely used in the food industry due to their unique amphiphilic (both water-loving and fat-loving) structure.
