Natamycin differs from other food preservatives in sensory properties:
Natamycin: usually has little impact on the sensory characteristics of food flavor, color and so
on, under normal use, basically will not change the original taste and appearance of food.
Other food preservatives: Some preservatives may have an impact on the sensory properties of
food. For example, excessive use of benzoic acid and its sodium salts may cause food to smell;
Sorbate and its potassium salts may affect the color and taste of food in some cases.
