In water (pH = 7), its solubility is 49.0 mg/ml
In 0.02M hydrochloric acid, its solubility is 118.0 mg/ml
It is almost insoluble under alkaline conditions.
Stability: Nisin exhibits excellent acid and heat tolerance. For example, when dissolved in defatted milk with pH = 6.5, it retains 85% of its activity after being pasteurized at 85°C for 15 minutes. In a 0.1% hydrochloric acid solution (pH = 3), it retains 100% of its activity after autoclaving at 121°C for 15 minutes.
