Definition & Composition
1. Flavor characteristics
Fresh onion aroma: Spicy, slightly sweet, with a pungent aroma characteristic of sulfides (such as dipropyl disulfide).
Caramelized onion flavor (for deep processing) : After roasting or frying, sweet, scorched and meaty flavors (such as maltol to enhance flavor).
