物化性质：无色透明或略带浅色、稠状液体。熔点42.35℃。沸点213℃时失去H2O，则生成焦磷酸。加热至300℃变成偏磷酸。相对密度1.87。易溶于水，溶于乙醇。其酸性较硫酸、盐酸和硝酸等强酸弱，但较醋酸、硼酸等弱酸强。能刺激皮肤一起发炎、破坏肌体组织。浓磷酸在瓷器中加热时有侵蚀作用。有吸湿性。长时间冷却变成结晶。
用 途
1、酸味剂和酵母的营养剂
2、调味料、罐头、清凉饮料的酸味剂
3、酿酒时的酵母营养源、防止杂菌繁殖
