Natamycin differs from other food preservatives in terms of safety:
Natamycin: very low acute toxicity, no genotoxicity, no adverse effects on the reproductive
system and embryonic development, most of the gastrointestinal tract is not absorbed, in its
original form with feces excretion, a small amount of absorption will be rapidly metabolized into
inactive products through urine excretion, high safety.
Other food preservatives: Safety has also been rigorously evaluated, but the safety characteristics
of different preservatives vary. For example, benzoic acid and its sodium salts are safe in certain
doses, but excessive intake can cause damage to the human liver and kidney; Sorbate and its
potassium salt are relatively safe and can participate in normal metabolism in the body, but the
amount of use needs to be strictly controlled. Lactostreptococcin is a natural biological
preservative with high safety, but may cause allergic reactions in a small number of people.
