Spectrum of Action:
Primarily effective against gram - positive bacteria (e.g., Staphylococcus aureus, Clostridium botulinum, Listeria monocytogenes), which are major causes of food spoilage and safety risks.
Less active against gram - negative bacteria (due to their outer membrane barrier), yeasts, and molds, though synergistic effects with other preservatives (e.g., organic acids) can enhance its efficacy against these microbes.
Mechanism of Action:
Disrupts the cell membrane of bacteria, leading to leakage of intracellular components and cell death.
Inhibits cell wall synthesis by binding to lipid II, a key precursor in peptidoglycan formation.
