超声波食品切割机与传统的切割完全不同。传统的切割方法是用一把锋利的刀子来挤压要切割的食物。压力集中在刀口，压力非常大。因此，材料被强大的压力拉开。对粘性、柔软和弹性材料的切割效果不好，切割表面也不完整。超声波切割机是一种利用波能进行切割和加工以达到切割食品目的的设备。当切割刀进行超声波振动时，摩擦阻力非常小，因此切割时不需要锋利的刀片和巨大的压力。并且不会导致切割材料坍塌和损坏。切割表面光滑整洁，切割材料不易粘在刀片上。超声波刀片可用于切割新鲜精致的烘焙产品。它避免了在分割前处理冷冻产品的时间和成本。它还可以以高标准完成传统切割机无法切割的食品的切割工作，尤其是冷冻、粘性和弹性材料。本机配备伺服驱动输送机和多轴切割头，可将圆形蛋糕切成楔形块或整块蛋糕切成方形、矩形、三角形、菱形、平行四边形、六边形等形状。
