Definition & Composition
1. Flavor characteristics: Has a strong aroma of toasted sesame, slightly nutty and scorched, some products may have a slight sweet or smoky feeling. It is divided into two main types: cold pressed sesame oil flavor (clear flavor) and roasted sesame oil flavor (Lu-flavor).
2. Ingredient source: Natural extraction: obtained from sesame seeds by distillation, extraction and other processes. Synthetic: Through the preparation of furan, pyrazines (such as 2, 5-dimethylpyrazine), sulfide and other flavor compounds to simulate the characteristic aroma of sesame oil.
3. Physical form: liquid (oil or water soluble), powder (spray drying or carrier adsorption) or emulsion form.
4. Stability: high temperature resistance is good, suitable for baking and high temperature processing, but need to avoid light, sealed storage to prevent oxidation.
Application:
1.
