Natamycin is different from other food preservatives in terms of antibacterial spectrum:
Natamycin: It has a high inhibitory effect on fungi such as mold and yeast, but the inhibitory effect on bacteria is weak.
Other food preservatives: Different preservatives have different antimicrobial profiles. For example, benzoic acid and its sodium salts have certain inhibitory effects on bacteria, molds and yeasts; Sorbate and its potassium salt mainly have inhibitory effects on mold, yeast and aerobic bacteria; The lactostreptococcin mainly has a strong inhibitory effect on gram-positive bacteria.
