Nisin is a naturally occurring lactic acid bacteriocin (a small antimicrobial peptide) produced by the bacterium Lactococcus lactis. Its core value lies in its ability to inhibit pathogenic and spoilage Gram-positive bacteria (e.g., Listeria monocytogenes, Staphylococcus aureus, Clostridium botulinum) while being non-toxic to humans, biodegradable, and compatible with most food matrices.
