Nisin is a naturally occurring lactic acid bacteriocin—a type of antimicrobial peptide produced by certain strains of Lactococcus lactis (a gram-positive lactic acid bacterium widely used in food fermentation). Due to its strong antibacterial activity, safety, and biodegradability, it is one of the most widely applied natural food preservatives globally, and also has potential in other fields such as biomedicine.
