Phospholipids in Beverages (Dairy Drinks, Plant Milk, Functional Drinks)
Core purpose: Emulsify oil-water mixtures (prevent separation) and improve mouthfeel.
Recommended dosage: 0.1%–0.3% of total beverage weight.
Examples:
Chocolate milk: Add 0.15%–0.2% soy lecithin to stabilize cocoa fat particles, avoiding cream floating.
Oat milk (plant-based): Add 0.2%–0.3% sunflower lecithin to reduce sedimentation of oat proteins and enhance solubility.
Caution: Exceeding 0.4% may cause a "greasy aftertaste" or make clear beverages (e.g., fruit juices) cloudy.
