Peanut protein is one of plant proteins with high nutritive value, which is better than animal protein. It contains more than 52% protein and high content of soluble protein and nitrogen solubility index (NSI). The product also has other advantage such as: good water-solubility, color of whiteness, flat taste and special peanut mild taste, without undesirable beany flavor and flatus factors and so on. Because of favorable foaming and emulsifying properties, peanut protein flour can be widely used as additive of beverage, dairy products, candy, cake, meat food etc, and can increase the content of plant protein of products.
