Natamycin differs from other food preservatives in ingredient sources:
Natamycin is a polyene macrolide antibiotic produced by the fermentation of Streptomyces natalensis, which is a preservative of biological origin.
Other food preservatives: There are many kinds and sources. For example, benzoic acid and its sodium salts are synthetic organic compounds; Sorbate and its potassium salts can be synthesized chemically or extracted from natural substances; Lactostreptococcus is a polypeptide produced by streptococcus lactis.
