The application advantages of phospholipids in the food field
Emulsifying stability: Phospholipids have a strong emulsifying ability, which can enable the oil-water system to form a stable emulsion. In the food industry, it is often used in dairy products, baked goods, margarine and other products. For instance, adding phospholipids in chocolate production can reduce the viscosity of cocoa butter in chocolate, making the chocolate texture finer and smoother, easier to process and shape, and less likely to have oil separation and phase separation during storage, thus extending the product's shelf life.
Preservation effect: Phospholipids can form a protective film on the surface of food, reducing the contact between food and the external environment, thereby delaying the oxidation and deterioration process of food. Meanwhile, it can also inhibit the growth and reproduction of microorganisms and improve the preservation effect of food. If phospholipids are added to meat products, they can reduce water activity, inhibit the growth of microorganisms and extend the shelf life of meat.
