双乙酰酒石酸单双甘油酯

性状:
黄色粉末或颗粒状固体,易溶于热水。它是一种非离子乳化剂,HLB值为8-10。

用途:
能产生乳化、分散、耐老化等强效,可作为良好的乳化剂和分散剂使用。
(1)能有效提高面团的弹性、韧性和持气能力,降低面团软化程度,增加面包和蒸面包的体积,改善其组织和结构。
(2)能与直链淀粉发生反应,延缓和防止食品老化。
(3)可用于奶油中,使其更光滑更细腻。
(4)可用于黄油和浓缩黄油中,防止油分离,增强其稳定性。
(5)也可在糖、糖浆、香料中起诉。
(6)可用于非乳制奶精中,使乳液口感均匀、稳定、柔软。

用法:
(1)将本品置于60°C左右的温水中,得糊状物质,再按适当比例使用。
(2)将本品均匀溶解在油脂中,再进一步加工。
(3)直接与面粉混合使用。

推荐添加量:
生干面粉产品和生湿产品的最大添加量为 1.0%,非乳制奶精的最大添加量为 5.0%。添加量可根据奶油和发酵乳的生产需要而改变。

储存运输:
密封贮存于低温、干燥、阴凉、通风良好的地方,以防止受潮结块。严禁与易爆、易燃或有害物品一起储存和运输。保质期为12个月。
